This is my humble take on delicious Pollo a la brasa Peruano, a Peruvian-style chicken. I love Peruvian food, from lomo saltiado to Ahi de gallina and delicious house-style ceviche. I can have it any day of the week. At times my little ones would complain the chicken would be too spicy so I decided to make a similar dish at home hoping they would forget the heat and continue to explore foods from other cultures.
It all begins with a homemade sazon using Ahi Amarillo (yellow chili paste), lots of garlic, lemon juice and, oregano amongst other natural ingredients. The chicken is marinated for 24 hours in the Sazon then Baked at 400F for a total of 1 hour or until the internal temperature reaches 165F. (If you tried air frying or grilling the chicken let us know in the comments below how it turned out.) Along with the chicken I also made an ahi Verde sauce which complimented the chicken. It was very simple and delicious.
My family loved the presentation of this dish but also the Peruvian flavors which were very similar to those of our local Peruvian restaurant. Try out this dish and let me know what you think.
Peruvian style chicken - ENGLISH
3 lbs chicken
4 garlic cloves
Juice 1 lime
2 tsp oregano
1 tsp cumin
2 tbsp ajà amarillo / yellow chili paste
2-3 tbsp olive oil
1 tbsp salt
1/2 tbsp black pepper
Green sauce/ Aji verde
2 jalapeños (less seeds = less heat)
4 garlic cloves
1 cup cilantro
1/2 cup Mayo (sour cream substitute)
Juice 1 lime
2 tbsp olive oil

3 libras de pollo
4 dientes de ajo
Jugo 1 lima
2 cucharaditas de orégano
1 cucharadita de comino
2 cucharadas de ajà amarillo / pasta de chile amarillo
2-3 cucharadas de aceite de oliva
1 cucharada de sal
1/2 cucharada de pimienta negra
Salsa verde/ Aji verde
2 jalapeños (menos semillas = menos picante)
4 dientes de ajo
1 taza de cilantro
1/2 taza de mayonesa (sustituto de crema agria)
Jugo 1 lima
2 cucharadas de aceite de oliva
sal y pimienta negra
