Weekends are days my family can't wait for because they all know mama is throwing it down in the kitchen. This past weekend my familia woke up to the fresh and lemony smell of lemon ricotta pancakes. It was such an easy recipe to put together and as for the ingredients I bet you have them all in your home right now as you read this. I'll always recommend making the batter from scratch but if you find yourself in a pinch feel free to use pre-made pancake mixes such as Aunt Jemima (now Pearl milling company) or Annie's organic mix. To that mix you can add the wet ingredients and keep it moving, your loved ones won't even tell the difference. Breakfast is always the most important meal of the day in my household because no matter what happens throughout the day at least we began our day together enjoying a delicious breakfast.
Ingredients:
1 1/4 cup all-purpose flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
3 eggs
1 cup milk
zest of 1 lemon
2 tbsp lemon juice
2 tbsp melted butter
1 tbsp vanilla extract
3/4 cup of ricotta
Optional:
1 tbsp powder sugar
Blue berries
